Menu plan for March 29

Here is the plan for next week:

Sunday: scrambled eggs, bacon, toast
dinner at moms (lasagna)

Weekday meals:
*baked chicken, chicken flavored rice, green beans
*chicken fried rice
*beef stew
*poor mans dinner
*steak, corn, applesauce

Saturday:leftovers for lunch

Friday's thankfulness

I am so glad its Friday! But when am I not? hehe I am thankful that my cousin came through his sugary okay! Now we need to pray for a speedy recovery for him. I am thankful that even though the dentist hammered my tooth in yesterday without numbing it it doesn't hurt to bad today! I am thankful to be done with that whole root canal situation. I am thankful all my childcare parents that were given a contract to sign, signed it!( I was worried about that one)
And I am thankful that I lost weight this week!!

Wow,, I am thankful for a lot today... Oh wait, one more,,, I am super excited that my grandparents are coming home from Florida on Sunday!! We haven't seen them in a few months! I really hope Emma isn't to shy with them, and she will love them as much as everyone else does!

Change

I've been feeling the itch of change lately so I thought I'd change my background for Easter!

Emma, budget and my diet

We took little Miss Emma to the doctor yesterday. Her finger is all red and swollen and she had a fever over the weekend and has been super grumpy. Well it ended up it was infected and he gave her antibiotics. So hopefully that will help, we arnt sure what the fever was from, but everyone else, accept for me has been sick so she probably has what they had. Its hard when they cant just tell you what is wrong.

As far as my grocery budget is going,, I spent about 100.00 over the weekend and with a couple of trips last week. So I'm not sure if the $250.00 thing for the month is gonna work. I don't know...I feel like I failed but at the same time that is a very little amount when you consider there is 5 people in my family, plus I provide food and snacks for my childcare kids that I watch. So maybe 250 isn't really a realistic number. I've read other blogs and somehow some people make it work,, maybe I just need more practice. I am not willing to sacrifice the nutrition of my family. I think I will continue to track my totals and see what everything averages out to over the next few months.

I am also ready to step up my weight loss game a little. I've only lost 15 pounds so far and have been stuck here at this same number for weeks! I know for a fact I am eating to much and not exercising enough so I'm gonna step up my game and try to buckle down and stop being lazy about this! My little sis has inspired me, she is like the cutest thing ever and is still trying to improve herself by living a healthier lifestyle, and my cousin is having w.l.s., on Thursday, so his lifestyle will be changing dramatically! I guess its my turn too! Menu plan and our Sunday

This weeks menu will go as follows:
Sunday-waffles
beer and cheddar brats, fries, macaroni salad, cantaloupe
Weekday meals:
BBQ chicken, green beans, chips,
open faced quesidiellas, guacamole and chips
spaghetti Alfredo, garlic bread
Swiss steak, mashed taters, buttery rolls
pizza

Saturday: steak on grill, baked taters, corn and salad

Yesterday I made a huge batch of homemade waffles and they were so yummy, since it made so much we had enough to put into the freezer! The kids wanted to try them out this morning so I took them out of the freezer and popped them into the toaster,, they tasted just like yesterday, but with the ease of a Eggo! Awesome! Now we've got breakfast burritos and waffles in the freezer.

It was so nice outside yesterday we grilled out and the kids really wanted to eat outside. My first instinct was to say no,, but then thought,, its not really gonna hurt anything so we did it! They loved it and it really wasn't any harder than setting the table inside:)

I think all to often I just say no when they request things and I am really trying to work on that. I don't want to be a "no mom", I want to be a "yes" mom. Obviously some things need to be said no to, but most of the time what they are asking for isn't that much more work and its just something simple that would make them so happy. An example is the other day we brang out all the pillows and blankets and watched a movie on the living room floor together. It thrilled them! It was like a little slumber party in the living room.

Overall we had a pretty good weekend. And here's to a even better week ahead!

Saturday stuff

Well here I am. Its Saturday night and I'm just relaxing. Ben is asleep in the recliner,,(has been for about 3 hours now), its 9:30pm, which means he is probably out for the night. He has had a long first week back to work and he is exhausted!

i had to take Gary to the dentist this morning in Ft.Wayne and since Ben had to work I was freaked out about driving up there by myself ( I hate driving,, especially there! ) but.......my awesome friend Stephanie helped me out and took a little roady with me up there so I wasn't so lonely. (Thank you again by the way!). It was so nice to just talk. We don't see each other all that often, so it was hilarious cause we were like two teenage girls just jabbering on, switching back and forth from one subject to the next, then realizing we never finished what we were saying and going back to the last subject. Honestly it was exactly what I needed after my awful week, and it made me realize I really need to have a little girl talk every now and then,, the main person I talk to is my husband, which is great,,, but its not the same as talking to one of you "girlfriends". So the day I worried about all week turned out wonderful!

Once I got back home Emma took an nap then we went over to a local park,,(like 5 min away) and let the kids play and Ben and Gary threw their fishing poles out a couple of times. We didn't stay long cause Emma isn't feeling the greatest. She had fun though.

All in all it was a pretty nice day. I was able to talk out some of my frustrations and relax. And I realized just because I dont see or talk to my friends everyday,, I still have some great ones!

Tuesday's rambles

We are thoroughly enjoying this lovely weather we have been having. It is suppose to get in the low 70's today! We are LOVING it!!! The babies just love to be outside. And then they get all nice and worn out for their afternoon naps, which is great for me!! :)

Ben went back to work yesterday and ended up working 12 hrs.! I guess since they lay ed of so many people the people that are still there are working a lot of overtime,,, don't ask me how that's really saving them money, but whatever. We will take it!! Poor hubby though,, he came home and said he felt 100 years old. He was so sore, I guess from relaxing for 3 weeks, and then being thrown into being on his feet all day long for 12 hours was a bit much.

You know, this may sound nuts to anyone young reading this, and I always thought people were nuts when they talked about the aches and pains of aging, but even though I am only 28 I can already tell that my body is not the same as it used to be. An example is my right knee. I have no clue what is wrong with it but there is defiantly something wrong. They have always cracked when I bend them but now I can hardly bend the right one without real pain. So I am dreading what its gonna be like in a few years!!! I don't like to say much about it because I hate when people are always complaining about things hurting, but I am pretty sure there is something wrong with it,, Its pretty sad,, 28 and already falling apart :(

I guess the only thing I can do is try to keep active and not get to outta shape. I'm gonna have to live with this one body for the rest of my life so I'd better take care of it right? :)

Menu plan and brekfast burritos

This morning hubby and I put together some brekfast burritos! We used sausage, potatoes, onion, eggs, and cheese! Yummy! Total we had 20, the family ate 5 and we had 15 to put in the freezer. With Ben going back to work tomorrow morning this can be an easy option for him if he wants some brekfast to grab and go. Just get one out and pop it in the microwave! Here is how our little assembly line looked this morning.

And as far as our menu plan for the week, Here ya go!
Sunday: brekfast burritos
dinner at mom's
Weekday meals:
*roast with potatoes and carrots
* bean chili mac ( we never got around to having this last week)
*crockpot roast chicken with potatoes and corn
*spagetti and garlic bread
Saturday-pull out some breakfast burritos,,, be in Ft.wayne by 11am for Gary's dentist
*lunch in Ft. Wayne
*free for all if anyone wants dinner :)

Crazy kids

Today is FREAKY FRIDAY at my kids school and they were supposed to dress crazy, This is what they came up with Gary is wearing his jersey backwards and pants inside out along with shorts over the top. And Jess is wearing her leggings with the lovely mismatched socks over top, and then her soccer shorts... with her shirt inside out. Oh,, and the different shoes.. She did her outfit all on her own.



And we get the joy of going to the carnival tonight with them dressed like this. Fun fun!

Thursday happenings

I went to the grocery today. Spent 65.00. I got some great deals though! So that brings my monthly total to 164 spent,,,, so I've got 86.00 for the rest of the month. Hmmmm... I should be able to do it.

Emma was extra ornery today. I lay ed her down for her afternoon nap. She whined a little but then got quiet so I thought she went to sleep. Well about 30 minutes later I heard her so I went in there and just about died. Her crib is by the wall and she had pulled down the border that we just put up in her room a few weeks back!...... I was so mad. It was just cheap stuff that we got from K-mart but still!!!! I managed to stick most of it back but there is one little piece missing. And the thing is now that she knows she can get it she will probably do that every time. We will see. Oh kids.... Ya gotta love them.

Tomorrow night we have the school carnival to go to with the kids, Jess is taking a friend and Gary is having one of his friends spend the night here. This will be his first sleep over here at our house. He has slept over at others houses but this will be the first time one of his friends comes here. It should be interesting!! Wish me luck!

Rambles

I made the poor man's dinner I told you about on the menu plan,,, it was pretty good. The kids liked it,, accept Gary has never been in love with potatoes, so it wasn't his favorite thing ever. It was defiantly something easy to throw together with things that you normally have on hand.

I went to the dentist today.... AGAIN.... I cant wait til this whole root canal process is over! I'm pretty sore today!

I've been very unmotivated this week for some reason. Hopefully the energy bug will hit me soon...

Big news!!

We got big exciting news today!!!! Bennie got called back to work! He goes back on Monday.,,, Hallelujah! Thank the Lord! Also another plus,, he will be going back on day shift. So that will be nice. We couldn't be happier.

I have learned a lot in these past 3 weeks. Its amazing how little you spend when you cut out the Unnecessary spending... also we need to be more focused on building our savings account so if something like this happens again,,, which it very well could,,, we can be even more prepared!

Money does not buy happiness,,,, Ben and I have gotten along better in these past couple weeks than ever. The kids haven't even noticed a difference accept for the not eating out,,, but they didn't seem to mind.

My goal now is to continue to live the way we have been in the past couple weeks... It will still be a couple weeks til we see a check anyways so I don't have much of a choice at first. I am going to continue my grocery experiment and see if it is doable.

Menu plan March 8

Here's this weeks menu plan. It includes a meal called poor man's meal. This is coming from a little show I saw on you tube. Its this 93 year old woman who lived through the depression and she gives recipes that they made during the great depression. I think its pretty interesting if you want to check her out. So here we go

* steak fajitas(with leftover meat from day before) re fried beans

Friday night

Well, we had a great night last night. Watching the belly dancing was so fun. It was so cool because as we watched I knew what the different moves were they were doing and I was thinking I could totally do that! :) This is a pic of us before we left my house, it is my mom, step dad, me then my hubby!

Friday is finally here!!

Man this has been a LLLLLLOOOONNNNGGG week!! I've been pretty quiet around here to I guess... Not a whole lot to say. Things have been going as well as can be expected around here. My husband has been absolutely great considering the stress he is under! He has been a joy to be around and is helping out quiet a bit too! I am loving it!

Tonight is the night we are going to watch my belly dancing instructor perform!! I am so excited. My sister is coming to babysit here at my house, which is awesome because it will be late when we get back and now I don't have to be worrying about dragging the kids out late.


I did my grocery shopping yesterday and it didn't go well. I spent 98.15,, not good. But since I'm doing my budget monthly I still have $151.85 left for the month of March. It should be doable. Also this is kinda an experiment for me. So I am seeing if it will work.

We have been doing great watching our money. We arnt making unnecessary purchases, and we are truly trying to make this work. Well, we really don't have a choice though do we..... we have to make it work :)

Hubby and I made up a spring cleaning list for around the house. I thought of posting it here and then updating it as we get things done. Is that dumb? Would anyone be interested in that?

Sweet-sour chicken

Shannon asked for my recipe for sweet and sour chicken yesterday, but this was our first time trying it so I wanted to see how it tasted before telling you about it. I got the recipe from "The Basics and More Cookbook".

Sweet-sour chicken:
1/4 cup butter
1/2 cup chopped onion
1/2 chopped green pepper
3/4 cup pineapple juice
3/4 cup ketchup
1/4 cup brown sugar
2 T. vinegar
2 tsp. soy sauce
1/2 tsp. garlic salt
1/2 tsp. salt
1/4 tsp. pepper
15oz. can pineapple chunks, drained
3 lb. chicken , cut up

I cooked it in the slow cooker. I put the chicken, then onions then poured the sauce over it, then the pineapple and green peppers. Cook on low for 8 hrs.


*This tasted very good!! I will defiantly make it again, but next time I will use boneless chicken because it was a pain to mess with the bones. We served it over rice and it was very yummy!

Catch-up day

Today is catch up day! I boycotted all laundry over the weekend, and it seems to have taken over the hallway for some reason :) So today I will be doing laundry. I already have the sweet and sour chicken prepared and put into the crock pot, so its working its magic!

Our weekend went well. Hubby and I did the biggest loser workout video Sat. night and it was tough!! Somehow he injured his heel and is limping now.... Whoops :) Then Sunday at belly dancing when we were doing our shimming my quads were on FIRE!! I thought my legs were going to fall off! I know its from working out the night before and I was already sore. Its great though! I love knowing I'm getting my body back into shape!

We still have this stupid cold. Its never ending. At any given time if you walk into my house I guarantee you will hear someone sniffing! Drives me nuts!
